This is the best way to get in as much colour into a healthy diet. Made with sauteed mushrooms, red bell peppers (capsicum), steamed corn and broccoli, kalamata olives, basil, rosemary, mint and grated paneer (cottage cheese) in a balsamic vinegar and lime juice vinaigrette. So we have black, white, green, yellow, browns and reds!! Ta-da!
